LostEms give you more door, windows and miscellaneous furniture options. If you enjoy building, the Cattect mods add tons of colors. I also like the Church of Plenty and the Serene League, but those are less polished. Archipelago adds a ton of stuff (new biome, fisher class, a new campaign, lots of cool additions across the game but none which are 'mandatory' to use.)
